QUICK WEEK NIGHT DINNER

 

 

Sometimes, we are so pressed for time that we have no desire to cook dinner.  Instead of ordering in, finding a recipe that is easy and quick may be a great option.  The other night we decided to make a pasta (yes another pasta) with smoked salmon and our Sun-Dried Tomato spread.  The recipe comes from Rachael Ray's "Just in Time" cookbook, which features recipes that can take anywhere from 15 minutes to 60 minutes.  

Ingredients

  • smoked salmon
  • shallots
  • heavy cream
  • parsley
  • whisky
  • peas
  • farfalle pasta
  • chicken stock
  • red pesto (we substituted with L'Italia a Tavola Sun-Dried Tomato Spread)
